I heard a Bible teacher on the radio say that one reason our salvation is a mystery to the angels is because they have no soul. Is this true they have no soul? Would this fit with the fact that they were once given the choice to follow God or Lucifer?

All we know about angels is that they’re eternal beings with intellect and agency (freedom of choice) and can take on physical form. Everything else is pure speculation. In humans intellect and agency are functions of the soul but no one knows if it’s the same with angels.
Personally, I think the reason that salvation is a mystery to angels is that they can’t imagine why God would do such a thing for the likes of us, but that’s just more speculation.
