I understand the “tribulation saints are those who come to know the Lord during Daniel’s 70th Week. My question is: Do the tribulation saints include both the saved faithful from the nation of Israel, as well as the saved gentiles from all the nations?

We know Jewish people saved after the Church is gone will not be part of the Church, and Tribulation saints is the only other category of end times believers. So, generally speaking you’re correct.
However, some separate them because of the difference in their destiny. All the saved from Israel will live in Israel during the Millennium while the Gentiles will repopulate the nations.
